今回の尾崎悟の新作は・・・。
今回もスペシャリテ専用のお皿を尾崎悟氏（鍛金作家）に作成してもらいました。 素材は純鉄。 平らでなかったり、穴が開いていたり、お皿の常識を完全に打ち破った作品ですが、まさに私の希望通りの作品になりました。 半焼き状態、無塗装の無垢鉄で、すぐに酸化してしまうので手入れは大変ですが 逆に、わずかな鉄分が、料理、食材の味やうまみに複雑さを与え、良い効果を与えます。 ぜひお楽しみに。
This time as well, I orderd Mr. Satoru Ozaki (a metal engraver) to make a plate exclusively for specialty.
The material is pure iron.
It's not flat, it has holes, and it completely breaks the conventional wisdom of plates, but it's exactly what I wanted.
It is a half-baked, unpainted solid iron, and it oxidizes quickly, so it is difficult to clean.
On the contrary, a bit amount of iron adds complexity to the taste and umami of food and ingredients, and has a positive effect.
